nuestra dieta consiste en hot-dog, hamburguesas, pizzas, tacos, etc., es por eso
que como buen conocedor me he dado cuenta de cómo se ha transformado la comida
tradicional, agregándole o quitándole condimentos al gusto de quien los

cuando pedimos una hamburguesa la podemos solicitar con sabor mexicano, japonés,
y hasta hawaiano, por lo cual le recomiendo tener mucha precaución al realizar
su pedido, no se confunda con las fotos de promoción del producto adheridas a
los cristales del <I>Carl’s Jr</I>. o <I>Burger King</I>, ya que en el momento
de degustar su comida corre el riesgo de sufrir unserio trastorno estomacal
producido por el pésimo sabor de estos inventos que lo único que consiguen es
restarle adeptos a la tradicional hamburguesa gringa.<o:p></o:p></SPAN></P>

¿qué me dice de la pizza? Seguramente los italianos se encuentran aterrorizados
al ver lo que algún cocinerito de <I>Toogino’s </I>con iniciativa, ha hecho del
alimento más tradicional del país de la bota; creo que jamás se imaginaron los
italianos comer una rebanada de pizza bañada con frijoles o aderezada con chiles
jalapeños, pero eso no es todo, les falta lo peor… pizzas cuadradas o
rectangulares, y por si fuera poco han tenido que soportar la peor de las
ofensas… y me refiero a la piza hawaiana… ¿la ha probado usted? Si se encuentra
distraído al comerla puede llegar a confundirse y pensar que lo que come es una
ensalada de frutas de la michoacana con doble queso y todos los
cereales.<o:p></o:p></SPAN></P>

creo que el más humillado de los alimentos chatarra es el hot-dog, y los
encargados de acabar con él fueron ni más ni menos que nuestros estimados amigos
sonorenses… ¿ha probado usted un hot-dog estilo Ciudad Obregón? Si no lo ha
hecho lo felicito, está a tiempo de conservar el sabor original de ese producto,
pero si ya se atrevió a comerlos creo que estará de acuerdo conmigo en que la
ofensa infringida a los perritos calientes no tiene perdón de Dios, ni de los
gringos…. Sólo basta con mirar el pan para su elaboración, traído directamente
de tierra yaqui, el cual más parece una telera para preparar una torta ahogada
que para un hot-dog, y después vienen los ingredientes: cebollas asadas,
champiñones, aceitunas negras, salsa bandera, salsa casera, queso cotija rayado,
crema agria, etc., ¿se le antoja comer uno? Nooooo. Y todavía si usted lo desea
le pueden agregar frijoles, siendo éste el último ingrediente para convertir
definitivamente en incomible esta extraña combinación de torta, taco, pizza,
hamburguesa.<o:p></o:p></SPAN></P>

no les demos ideas a los güeros, que luego luego se las

japoneses han de sufrir de insomnio, y todos los días les encienden una caja de
incienso a Buda, con tal de que su sushi o su teriyaki no caigan en la tentación
de algún folclórico chef mexicano de <I>La Cochinita</I>; ¿se imagina usted
sushi estilo Mocorito, o con todo el sabor de Oaxaca? ¿O un teriyaki de pollo
servido sobre una cama de nopal asado y con una guarnición de ensalada de tuna y
chongos zamoranos? Ojalá nunca veamos algo así, los hijos del sol naciente
pueden ser terribles como enemigos.<o:p></o:p></SPAN></P>

que creo que no tienen nada de qué preocuparse con los chinos, nunca he visto un
mexicano preparando el shop suey en sus cocinas, por lo general sólo ellos
preparan sus alimentos y sus recetas son secretas, así que por el momento el
gato cantonés y la rata almendrada están a salvo; disfrutémoslos mientras no
caigan en la desgracia del sazón mexicano. Pero todos estos comentarios tienen
otro motivo, y no es precisamente la defensa de la comida extranjera lo que me

realmente me preocupa es el taco, sí, nuestro querido y sacrosanto taco, el
manjar de presidentes, diputados y senadores, el infaltable en las
narco-fiestas, cumpleaños y bautizos, el ícono de la comida mexicana, la bandera
de nuestra gastronomía, el símbolo de nuestro arte culinario. El taco en su
historia ya ha sufrido el insulto de la elaboración al estilo norteamericano de
<I>Taco Bell</I>, el cual debió de ser motivo de una queja internacional por
parte de la Secretaría de Relaciones Exteriores al ser mancillado su orgullo con
el cambio de ingredientes tradicionales y hasta de su aspecto clásico, pero
desgraciadamente, el taco, sólo cuenta con sus admiradores para su
defensa.<o:p></o:p></SPAN></P>

tijuanenses hemos tolerado la multiplicación de variedades del taco, nos ha
tocado ser testigo de la disminución de su tamaño, hasta llegar a sólo dos
mordidas y con riesgo de perder un pedazo de dedo. Pero lo que nunca les
perdonaríamos a <I>Los Poblanos</I>, es que cambiaran la receta clásica, ¿qué
sentiría usted si pidiera un taco de asada y se lo sirvieran con pepinillos
dulces y salsa de soya? O bien, que su orden de tacos de carnitas fueran
acompañados con champiñones, aceitunas negras y trozos de piña, y en el peor de
los escenarios, que sus riquísimos tacos de birria, en vez de cebolla y cilantro
les pusieran catsup y mostaza, sería definitivamente un insulto a la nación,
algo imperdonable que ningún mexicano podríamos tolerar.<o:p></o:p></SPAN></P>

esta razón hoy alzo mi voz, ante la amenaza que se cierne sobre nuestro taco,
del surgimiento de una mente brillante, que transforme el más clásico de
nuestros alimentos y lo lleve a la denigración de que ya fueron objeto el resto
de los alimentos chatarra…. Hoy propongo que todos los mexicanos y mexicanas nos
unamos para defenderlo, que no permitamos que se mancille el honor del alimento
de tradición ancestral de nuestra nación, y que mano con mano luchemos por
mantener a salvo la dignidad del taco.<o:p></o:p></SPAN></P>
